Ingredients

    2 eggs
    1 tsp Vanilla Extract
    1/2 cup Applesauce, unsweetened
    1 mashed medium Banana
    1 15 ounce can Pumpkin
    6 packets Truvia
    5 cups Old Fashioned Quaker Oatmeal- Plain
    3 tsp Baking Powder
    3 TBSP Cinnamon, ground
    1 tsp Salt
    2 3/4 cups Milk, nonfat (skim milk)
    2 cups Blueberries, frozen
    3 TBSP Chocolate Chips








Directions

Preheat oven to 350 degrees.
Mix eggs, vanilla, applesauce, banana, pumpkin and Truvia together in a bowl.
Add in oats, cinnamon, baking powder, salt and mix well with wet ingredients.
Finally pour in milk and combine. Add blueberries
Spray muffin tins with cooking spray or use cupcake liners.
Pour mixture evenly into muffin tin cups.
Sprinkle chocolate chips on top if desired.
Bake 30 minutes until a toothpick in center comes out clean. Cool and enjoy or freeze them.
