Nice side dish for any meal. Nice side dish for any meal.
Number of Servings: 6


    2 cups cooked brown rice
    3 small zucchini, cut into small pieces
    3 tbsp minced garlic
    1 cup chopped onion
    1 tbsp olive oil
    1 tbsp basil
    1 tbsp paprika
    1 tbsp ground oregano
    1 can diced tomatoes
    1/2 cup kraft 2% mexican cheese blend


Preheat oven to 350 degrees. Spray casserole dish with cooking spray. In a large skillet, heat olive oil and garlic. Add zucchini and onion. Cook until crisp/tender - about 5 minutes. Add basil, paprika, oregano and tomatoes. Cook until heated through. Pour into casserole dish. Top with cheese. Bake 20 minutes until cheese is melted and bubbly.
