Number of Servings: 4


    500g lean pork, cut into thin strips
    1 tablespoon cornflour seasoned with salt and pepper
    1 tablespoon runny honey
    1 tablespoon soy sauce
    1 tablespoon lemon juice
    200ml chicken stock made from liquid concentrate
    1 tablespoon vegetable oil
    1 red pepper, thinly sliced
    4 spring onions, finely sliced
    1 teaspoon finely chopped garlic
    1 teaspoon finely chopped fresh root ginger (optional)
    200g brown rice noodles


You can have this with Brown Rice instead of noodles.


1. Toss the pork in the cornflour coating it evenly.

2. Mix the honey, soy sauce, lemon juice and stock together in a bowl.
3. Heat the oil in a wok and cook the pork until it is just beginning to brown; set aside. Add the veg, garlic and ginger to the wok and cook for a few minutes, stirring the whole time. Throw the pork back into the pan and pour the honey mixture over it. Simmer until the pork is cooked through.
4. Meanwhile, prepare the brown rice noodles according to the packet instructions and serve

Serving Size: 4 servings. 1/4 of each, pork and noodles.
