    EVOO, 2 Tbsps (I omit)
    1.4 Cup chopped red onions
    1 lb lean ground beef
    16 ozs. cauliflower, cut into bite size pieces
    6 Tbsp soft butter (I use 3)
    Fresh ground pepper to taste
    1/2 tsp garlic powder
    3/4 cup parmesan
    2 egg yolks
    2/3 cup SoNice Natural soy milk


I omitted the olive oil used to cook the onion by using cooking spray or a non-stick pan and halved the amount of butter in this recipe. Saved a lot of calories, otherwise this meal is "expensive" calorie-wise


Preheat oven to 325 degrees, Butter a casserole dish with 2 tbsp butter or use stoneware. Heat a large skillet on medium and add olive oil and onion. Lightly brown. Add ground beef and cook until brown. Steam Cauliflower. for about 8 minutes until soft yet crunchy. Put the cauliflower and hamburger in the mixing bowl. Stir in 4 tbsp of butter. Add garlic powder, salt and pepper. Add the Parmesan cheese and stir. Beat egg yolks and combine with soy milk Add this to the cauliflower and put the mixture in the casserole dish. Bake for 1/2 and serve.
