Ingredients

    2 tsp olive oil
    2 medium raw zucchini, sliced and diced
    1 medium onion, chopped
    10 raw baby carrots, chopped
    2 cups raw kale, chopped
    28 oz can diced tomatoes, with basil, garlic and oregano
    4 cups vegetable broth
    15 oz can great northern beans, drained and rinsed
    1 cup cooked qunoa or orzo
    1/4 tsp salt
    1/4 tsp pepper

    serve with parmesan cheese on top


Directions

heat oil in large pot, add carrots, zucchini, onion, saute on high heat until onion is transparent -approx 7 mins
add kale, saute until wilted- 3 to 5 mins,
add tomatoes, broth and beans simmer about 20 minutes or until carrots are tender- stir in qunoa, salt and pepper
