Ingredients

11 large eggs
1/2 red pepper, diced
1/2 green pepper, diced
1/2 sweet onion, diced
2 cups frozen spinach (thawed)
12 strips of turkey bacon
Directions
Preheat the oven at 350 degrees.
Dice the red and green peppers along with the onion and set aside in a bowl. Thaw the spinach in the microwave.
Crack the eggs and add them to a blender, and mix. Add the thawed spinach to the blend and mix (do this quickly just to mix, not blend).
Then add the pepper and onions to the egg mix and blend only to stir all the ingredient together.
Grease the muffin tin and wrap the bacon around the edge of each muffin cup. Pour the egg mix into each cup (it helps to pour and use a spoon too).
Bake the egg souffles for 30-35 minutes. Remove and allow to cool in the tins for 5 minutes.
Remove and eat immediately or place in an air tight container and move to the fridge for later.
Serving Size: Makes 12 mini souffles (muffin tin)
