    3 Ripe Bananas
    2 Eggs
    1 T vanilla extract
    1/4 C Plain or vanilla yogurt (can use Greek yogurt if preferred)
    1/4 C Honey

    2 1/2 C whole wheat flour
    3/4 t baking soda
    1 t salt


I've only made this once so far and it was a bit dry. I'm going to try adding a bit more yogurt next time or maybe some "clean" apple sauce.


Preheat oven to 350 degrees. Whisk together dry ingredients. In a separate bowl, mix together bananas, eggs, vanilla, yogurt, and honey until there are no longer lumps of banana. Fold the banana mix into the flour mix, be careful not to overmix! Pour batter into a greased loaf pan or cast iron skillet. Cook for 30-40 minutes or until a toothpick stuck in center comes out clean.
