1 c. quinoa, rinsed
1 tbsp. butter
2 c. beef stock
2 c. mushrooms
2 tbsp soy sauce
Pepper, to taste
I think quinoa is better if it stands for a few minutes after you've taken it off the heat. Then fluff it around in the saucepan and serve.
Try a reduced-sodium soy sauce, unsalted butter, and low-sodium beef stock to help curb the sodium in this dish. The sodium count shown is using the full-sodium versions of the ingredients and it is a lot!
