    1 cup basmati rice dry weight.

    3 garlic cloves
    1 inch piece ginger,grated
    .5 tsp peppercorns
    2 gren cardamom pods
    1 tsp cumin seeds
    1 tsp coriander seeds
    1 inch cinnamon stick

    1 tsp saffron strands
    2oz tepid water.

    1 tbsp olive oil
    2 small onions (shallots)sliced
    .25 tsp grated nutmeg
    .25 tsp chili powder.


You can also mince a tomato or 2 into the rice while cooking the last 5 minutes.
serve with any kind of protein you like.


soak the dry rice in water for30 minutes.
Grind the garlic,peppercorns,cardamom, pods,
cumin seeds,coriander seeds and cinnmon stick into a paste, using a spice grinder or blender.
in a separate bowl , add the saffron to 2 oz water ,set aside.
heat the oil in a pan add the onions and fry until golden
then add the ground spice mix nutmeg and chili powder
cook until fragrant.
Now cook the rice as per package, add the onions and spice mix, stir to blend and cover pan lid with a clean towel , cook covered until rice is almost done, time for the saffron, trickle the saffron liquid over the rice cover sgain and finish cooking.

Serving Size: makes 4 servings @ .5 cup each
