Ingredients

    2 tbsp canola oil
    1 cup onion chopped
    4 garlic cloves minced
    10 cups water
    chicken boullion for 8 servings
    2 cups leftover shredded pork
    1 cup leftover shredded chicken
    1 - 29 oz can Mexican style hominy
    1 teaspoon oregano
    1/2 cup Rotel
    avocado - cut into 6 portions
    cilantro
    jalapeno

Tips

This is a warm delicious meal for cool nights.


Directions

Saute onion and garlic in heated oil in large dutch oven over medium heat. Add water and bouillon and warm through. Add pork, chicken, and hominy and oregano. Simmer over medium low heat for 30 minutes. Stirring to avoid sticking. Serve with 2 tablespoons rotel, 1/6 avocado and fresh chopped cilantro.
