    2 - 3 lbs chicken tenders
    1/2 c green olives (salad olives with pimiento work well), sliced
    3 large garlic cloves, minced (I used jarred minced in OO)
    1/4 c dried oregano
    1/4 c dried parsley
    6 bay leaves
    salt and freshly ground peppercorns, to taste
    1/2 c red wine vinegar
    1/4 c EVOO
    1 c apple juice (I used 2 prepackaged applesauce cups)
    1/2 c brown sugar, packed


Nutritional values will differ depending on pieces and alternates. Recipe values calculated from cut-up whole chicken into tenders-sized pieces.

Don't baste or you'll wash the sugar off!


Mix all ingredients except brown sugar in a zipper bag.
Squeeze out as much air as possible. Marinade several hours or overnight.

Preheat oven to 350F.
Arrange chicken pieces in a baking dish. Pour marinade over. Sprinkle liberally with brown sugar. Cook about 30-45 minutes, or until juices run clear.
