Introduction

Ingredients

1.5 cups oats
.25 cup almond meal *
1 cup flaked coconut, sweetened
.5 tsp salt
1 cup dried cranberries (or any chopped fruit)
1 cup almonds, chopped (or any chopped nuts)
.5 tbsp ground nutmeg
.5 tbsp ground cinnamon
1 tbsp vanilla extract
3 very ripe bananas, approx 2 cups
.25 cup coconut oil (or canola oil)
(If you don't have almond meal, make it! .5 cup almonds in the food processor with .5 tbsp white sugar, and pulse til it's a fairly fine meal. The sugar keeps it from clumping, absorbing the nut oils.)
Tips
These freeze REALLY well and are a good substitute for the standby 'granola bar' or 'muffin' in lunches too.
Directions
Mix oats, almond meal, coconut, salt, nutmeg and cinnamon in a bowl. Stir in chopped nuts and fruit. Make sure they're not stuck together.
In a small bowl, mash bananas, oil and vanilla well. Stir into oat mixture until mixed thoroughly.
Form into balls (by hand is easiest) and flatten out lightly. Make sure all cookies are same thickness when you're done.
Place onto parchment lined cookie sheet for 20 minutes at 350*f.
When done, pull the sheet of paper off of the sheet with the cookies still on it. Loosen them with a sharp-edged lifter right away. Cool before eating.
