    Egg, fresh, 5 medium
    Mushrooms, fresh, 1 cup, pieces or slices
    Spinach, fresh, 1 cup
    Scallions, raw, 1/4 cup, chopped
    Flavorite Mild Cheddar Shredded Cheese, 1/2 cup
    Potato, raw, 1/2 cup diced
    Olive Oil, 1 1tsp


1) Break the eggs into a bowl and wisk them until light and fluffy.
2) Slice scallions and mushrooms.
3) Heat non stick pan with spray and olive oil. Add potatoes and cook until browned.
4) Add mushrooms and scallions.
5) When vegetables are cooked add the eggs to the pan.
6) When eggs are almost cooked, add the cheese and flip it over.
Cut into 4 servings.
