This is a delicious, velvety, nutritious soup. This is a delicious, velvety, nutritious soup.
Number of Servings: 8


    1 1/2 C Dried Yellow Split Peas
    4 1/2 C Water
    1 or 2 Bay Leaves
    1 tsp Salt

    1/4 lb. Cooked Ham
    1/2 C Chopped Onion
    1/2 C Chopped Carrots

    2 C Milk - include 1 Can 2% Evaporated Milk
    Dash of Cayenne pepper
    1/2 tsp Nutmeg and Thyme


This fabulous soup improves in flavour the next day. Enjoy!


Wash and drain peas. Boil first four items for 12 minutes. Remove from heat and let stand for one hour covered.

Add Ham, Onion and Carrots. Cover and simmer for 1 hours or until peas are tender. Remove Bay Leaves. Puree.

Add Milk, Cayenne, Nutmeg and Thyme. Reheat.
