    1 egg
    1 egg white
    .5 C Better 'n' Eggs egg substitute
    .5 Tbs chopped fresh or .25 tsp dried basil
    .5 Tbs chopped fresh or .25 tsp dried mint
    1 Tbs chopped fresh or .25 tsp dried sage
    .5 Tbs grated Parmesan cheese
    .25 tsp salt
    dash pepper
    1/8 C diced fully cooked ham or prosciutto
    drizzle olive oil (~.25 Tbs)
    1/8 C onion, finely chopped


In medium bowl, beat all ingredients except ham, butter, and onion thoroughly with fork or wire whisk until well mixed. Stir in ham.
In small nonstick skillet, drizzle small amount of olive oil. Cook onion 4-5 minutes, stirring frequently, until crisp-tender; reduce heat to medium low. To make recipe lower in fat and calories, saute onions in a little water instead.
Pour egg mixture into skillet. Cover and cook 5-7 minutes or until eggs are set around edge and lightly brown on bottom. Cut into wedges.
Makes 1 serving.
