Very tasty - served piping hot. Very tasty - served piping hot.

    1/4 cup Organic Coconut Flour,
    1/4 cup almond Flour,
    2 Tbsp. *Bob's Red Mill Organic 100% Whole Ground 2 Golden Flaxseed Meal
    1/4 cup Coconut, shredded and unsweetened,
    Egg, fresh, 6 extra large
    Banana, fresh, 3 medium (7" to 7-7/8" long) -- very ripe, even over-ripe!
    Baking Powder, 3 tsp


Very tasty.


Mix all ingredients well using Stand mixer. (start with bananas and eggs; when thoroughly mixed, add other ingredients.
Grease muffin tins with coconut oil (or grease paper liners). Bake at 350 degrees for about 25 minutes.

Serving Size: Makes 13.5 muffins
