    1 cup Quinoa
    4 cups Vegetable broth
    1 large red onion
    Olive oil
    Large bunch of cilantro
    Juice from 1 lime
    1 jalapeno, chopped
    1 avocado


Heat olive oil on medium high, add garlic and cook for a minute. Add onions and cook until soft, about 3-5 minutes. Add rinsed quinoa and cook until toasted, stirring, about a minute. Add vegetable broth and jalapeno. Bring to a boil, reduce heat and simmer for 15 minutes. Add cilantro and lime juice, salt and pepper to taste. Garnish with diced avocado.

Serving Size: Makes 5 2 cup servings
