    2 cups chickpeas, cooked and drained
    4 eggs, separated
    1 tsp vanilla
    5 squares (140g) Baker's Chocolate, semi-sweet
    1 tsp baking powder
    1 tsp apple cider vinegar


Separate eggs.

Preheat oven to 350F

In food processor mash chickpeas and add yolks; process until creamy. In microwave safe bowl melt chocolate squares, stirring occasionally. Add to egg-chickpea mixture to form the batter and stir in 1/2 cup sugar, salt, and vanilla. Stir in baking powder and vinegar.

In a separate bowl whip whites; once soft peaks are reached add 1/4 cup sugar, and whip to stiff peaks.

Fold in whipped whites in three batches.

Portion batter in cupcake forms; use cupcake wrappers (paper), or grease and 'flour' forms to cakes do not stick.

This makes enough for 13; you can put the 13th in a ramekin or similar.

Bake at 350F for 30 minutes or until a toothpick inserted in the center of a cake comes out clean. Let cool before turning out.
