    1/2 tsp olive oil
    1/2 cup pinto beans
    1/2 cup cooked brown rice
    1/2 cup frozen stir fry vegetables
    1/2 tsp cumin
    1/2 tsp cayenne pepper
    1/2 tsp oregano
    1 oz low fat shredded cheddar cheese
    2 tbsp fat free sour cream


In a non-stick skillet, heat the oil over medium high heat. Rinse the pinto beans and when the oil is ready, add them to the pan. Add stir fry vegetables and sautee until heated through.

Add leftover brown rice and spices to skillet. Stir frequently until heated through.

Plate and top with shredded cheddar cheese and sour cream. Enjoy!
