Number of Servings: 10


    2-10 oz packs of frozen spinach or about a pound of fresh
    1.5 cups of garbanzo beans
    1 cup diced scallions
    4 diced cloves fresh garlic
    2-3 teaspoons of dried thyme leaves
    2-3 teaspoons of dried oregano leaves
    1or 2 cups shredded mozzarella cheese
    2 cups cooked quinoa (or rice, pasta, couscous)


1. Cook frozen spinach and drain (you can use fresh, but just sautee in step 2.
2. Sautee garlic, herbs, scallions in olive oil to get flavor dispersed.
3. Stir in thawed or fresh spinach, coat with seasonings.
4. Stir in garbanzos.
5. Stir in quinoa and then cheese.
6. Reserve some cheese to top casserole, and also shake some thyme, oregano, ground pepper on top of cheese coating.
7. Bake at 350 F for 30 minutes, you may want to allow for cheese topping to get nice and brown.
