    Olive Oil
    Carrot (Chopped)
    Yellow Pepper
    Low Sodium Chicken Broth


You can also add any vegetable to this or add some sort of meat or egg for something different.


Cook Rice as per directions on box.
In a separate pan put in olive oil, heat over med heat, add all vegetables except peas.
When rice is cooked add to pan with vegetables, add in Chicken Broth, and peas. Cook for additional 5 mins, or until vegetables are tender, stirring occasionally.
