Introduction

ABSOLUTELY FABULOUS! ABSOLUTELY FABULOUS!
Number of Servings: 4

Ingredients

    Olive oil spray
    8 shiitake mushrooms
    1C broccoli
    1/2 c matchstick carrots
    6-8 baby corn ears
    10-12 asparagus tips
    1/2 c. sno peas
    .5 c bean sprouts
    4 garlic cloves minced
    1/4 c. cashews
    2T diced jalapenos
    1T fresh lime juice
    2C quinoa or quinoa & brown rice mix
    1 lbs boneless skinless chicken breast

Tips

I use Uncle Ben's Garlic Quinoa and Brown rice steamer bags to save time.


Directions

Cube and saute chicken breast then set aside
1. spray lg skillet with olive oil and heat
2. Add shiitake mushrooms and saute 4 mins
3. Toss rest of veggies, garlic, cashews, and jalepenos saute 5 mins stirring occasionally
4. When veggies are tender toss with lime juice
5. Top with cooked quinoa & brown rice & chix breast
