    1 Tb olive oil, for pan
    4 cloves garlic
    1 med red onion, sliced
    1 cup dry lentils
    2 cups low sodium vegetable broth
    1 Tb olive oil (add in step 2)
    1 tsp ground cinnamon
    1 tsp ground cardamom
    1 tsp ground cumin
    Kosher salt and black pepper
    1 lemon


1. heat olive oil in a medium saucepan over medium/high heat. Add garlic and onions, cook until tender (8-10 mins). Add lentils an broth, cover and cook for about 20 minutes. Lentils should be tender.
2. Remove from heat; gently drain lentils and place in a serving dish. Add olive oil, cinnamon, cardamom and cumin.
3. Stir gently to combine and season with a pinch of salt and black pepper.
4. Squeeze lemon juice over the top and serve warm with salad.
