    3 cups(2 medium) zuchini, coarsely grated
    1/2 tsp salt (optional)
    1 cup bread crumb
    1/2 cup freshly grated parmesan cheese
    1 egg
    4 green onions, thinly sliced
    1/4 cup red bell pepper, finely chopped
    1 1/2 tsp Old Bay Seasoning
    1 tsp dijon mustard
    1 tbls mayonaise
    1/8 tsp red pepper flakes


preheat oven to 400
grate zucchini, then squeeze in a clean kitchen towel. zucchini should be fairly dry and you should have about 2 cups after removing from towel.
place zucchih and remaining ingredients in a bowl; mix well.
form into 12 patties (approx. 2 inches diameter)
bake for 10 minutes, flip cakes and bake for an additional 8 minutes

Serving Size: makes 12 cakes, 2 or 3 make a serving
