Quick,tasty, and low calorie version of chicken enchiladas. Quick,tasty, and low calorie version of chicken enchiladas.
Number of Servings: 6


    6-8 large low carb high fiber tortillas
    13 oz. canned chicken in water
    1/2 cup your favorite salsa
    1 cup your favorite enchilada sauce
    1 cup 2% or lower shredded Mexican cheese


Use all of the enchilada sauce because it will absorb into the tortillas during baking.


Pre-heat the oven to 350. Remove the liquid from the canned chicken and put chicken in a medium sauce pan. Add the salsa to the chicken and heat on medium high heat. Mix until combined well and chicken is shredded. Remove from heat. Once chicken mixture is cool to the touch, place about 1/4 cup of chicken mixture in each tortilla and top with a little cheese on each. Roll each tortilla up and place seem side down in a 9 X 13 in pan. Pour the enchilada sauce over the rolled tortillas in the pan. Place the pan in the oven and heat for 15 minutes. Top enchiladas with cheese and cook for 5 more minutes or until cheese is melted.
