    1 tsp of olive oil
    1 cup of finely chopped onion
    1/2 cup of finely chopped carrot
    1 tsp of dried oregano
    2 garlic cloves, minced
    1 cup of ketchup, divided
    1 pound of ground buffalo
    1 cup of finely crushed fat free saltine crackers
    2 tbsp of mustard
    1 tsp of worcestershire sauce
    1/4 tsp of black pepper
    2 large eggs
    cooking spray


-Preheat oven to 350
-heat oil in large skillet over medium heat
-add chopped onion, carrot, oregano and garlic -saute for 2 min. let cool
-combine onion mixture 1/2 cup of ketchup and remaining ingredients beside cooking spray into a large bowl
Spray pan or muffin tin with cooking spray
Spoon mixture into the 12 muffin cups
Top each with 2 tbsp fo ketchup
Bake at 350 degrees for 25 minutes
Let stand for 5 mins
6 servings (serving size of 2 muffins)
