    2 cups shredded coconut
    13 whole almonds
    6 ounces dark chocolate, melted
    1 TBSP coconut oil


Melt 1 TBSP coconut oil in microwave with chocolate. Whisk together. In a small bowl, take 2 TBSP of chocolate mix and toss almonds to coat. Set aside. Mix remaining chocolate mixture thoroughly with shredded coconut. Place a sheet of wax paper onto a large baking sheet. Using 2 large spoons, take about 2 1/2 tablespoons of the coconut mix and mold into an oval. Place on the wax paper. Repeat with remaining coconut. Place an almond on top of each coconut mound. Refrigerate for 10 minutes until firm. Serve. (These keep in the refrigerator for about 4 days.)
