    3/4 cup uncooked rice
    1 1/2 cup vegetable broth
    4 cups kale greens chopped
    1 small onion chopped
    4 cloves garlic minced
    2 Tbsp soy sauce
    2 Tbsp apple juice
    1 tsp agave nectar
    2 tsp olive oil
    1 Tbsp olive oil for sauteing


Cook rice in vegetable broth. In a separate pan cook kale in 4 cups of water for approximately 4-5 minutes. Drain kale, let cool & squeeze out excess water. Set aside. In large skillet, saute onion in 1 Tbsp. olive oil approximately 4-5 minutes. Add garlic & saute a couple more minutes. In a small bowl mix soy sauce, apple juice, agave nectar & 2 tsp olive oil.

Add kale to the onion & garlic & saute. Stir in rice & soy sauce mixture. Stir well & serve.

Serving Size: Makes 3 - 1 1/2 cup servings
