    1 cup farro (spelt berries)
    2 ts olive oil
    1 cup chopped yellow onion
    3 cloves garlic, minced
    1 TB chopped parsley
    1/2 ts sea salt
    1/2 ts pepper or to taste
    2 cups vegetable broth
    1 can beans (garbanzo, navy)


Supposedly the farro cooks in 45 minutes. However, I cooked it for over 2 hours.


Soak the farro an hour, up to overnight. Drain.
Heat oil in heavy pot and saute onion until tender.
Add garlic and farro, and saute 5 minutes, stirring occasionally.
Add remaining ingredients, bring to a boil, cover, lower heat to medium low, simmer 1-2 hours, until all the water is absorbed and the farro is soft.
Turn off heat and let stand 10 minutes.
Fluff with a fork, then serve.
