I found this recipe courtesy of Dukan Diet.com. Reminds me of twice baked potatoes. I just used what I had on hand. I am sure the counts can be lower but here is my take. Ingredients

    1 large head cauliflower, cut into florets
    3 oz. neufchatel cream cheese
    1/4 cup fat free sour cream and light sour cream
    1/4 cup kraft grated parmesan cheese
    1/4 cup green onions
    4 slices hormel lower sodium bacon cooked and crumbled(could use reduced fat bacon)
    1 cup cabot 50 % reduced fat cheese

Tips

Can try to use fat free sour cream and cream cheese for lower fat grams. Original recipe said not to use fat free. I did use half the amount of fat free sour cream and saw no ill effects to the dish.


Directions

Preheat oven to 340 degrees.
Boil cauliflower florets until tender but not mushy.
Drain in colander and add back to pot over med low heat and cook off more of the water.
To pot add creamcheese, sour cream and stir until cream cheese has melted. Then stir in green onions and half the bacon.
Spray a 8 x 8 glass baking dish and spread cauliflower mixture evenly. Sprinkle the cheese over top and then with the remaining bacon.
Bake in oven until heated through and cheese has melted.

Serving Size: Makes 8 servings.
