    1/2 red bell pepper (medium)
    1/2 cup red onion (chopped)
    1 tsp olive oil
    1/3 cup kale (chopped)
    24 large shrimp (cooked)
    1 fl oz lemon juice
    1/2 black beans
    1/2 cup mango
    1/3 cup pineapple


In a medium bowl, toss shrimp with lemon juice. Sprinkle with salt and pepper. Set aside
Bring a large pot of water to a boil.
In a large non-stick skillet over medium heat, sauté red bell pepper and onions in olive oil until peppers are soft. Add kale, black beans and shrimp. Continue to cook until shrimp turn pink, stirring occasionally, about 5 minutes.
