    2 tablespoons olive oil
    1 medium onion, finely diced
    2 cloves garlic, minced
    2 cups of sweet potato, cooked and mashed
    2 cans of white beans, rinsed and drained
    1 cup cooked brown rice
    3 tablespoons tahini
    3 tablespoons tamari or Bragg liquid amino acids
    3 tablespoons lemon juice
    1 tablespoon ground cumin
    Other seasonings to taste (Spike, paprika, additional salt)
    Breadcrumbs or almond meal (to dredge and cook burgers)


1. Bake or microwave the sweet potatoes until tender and scoop out centers into a large bowl.

2. Drain and rinse white beans and add to bowl of sweet potatoes. Mash together.

3. Sautee chopped onion in olive oil until soft, add garlic and cook a few minutes more.

4. Add cooked onion and garlic to the bowl along with brown rice, tahini, tamari, lemon juice, cumin and other seasonings. Mix all ingredients together and add additional seasonings to taste.

5. Form mixture into 8 patties and dredge in breadcrumbs or almond meal for cooking.

6. Warm a cast-iron skillet or other heavy pan. Spray pan with canola or olive oil and spray the burgers lightly. Brown both sides.

7. Serve on toasted buns and top with your favorite veggies and condiments
