Introduction

Ingredients

one onion
half a chicken
2 tomatoes
1 red bell pepper
1 green bell pepper
3 cloves of garlic
3 potatoes
1/2 cup rice
1/2 cup peas
3 tablespoons peanut oil
100 ml white wine
Directions
Boil the chicken in a large pot with 3/4 filled with water and with 3 chicken bouillon cubes for 1 hour.
Cube the onion, garlic, potatoes, peppers and the tomatoes
*(First blanch the tomatoes and peal them!!)
In a pot add 3 tblsp of peanut oil and once heated add the chopped up vegetables and cook till slightly softened. Add the white wine and let it simmer for 15 minutes until the potatoes have softened.
Add the rice and the peas
Take the chicken from the broth with a slotted spoon and tear the chicken into pieces add to the pot with the vegetables along with 4 cups of the chicken broth. Cook for another 20 minutes or until rice is cooked.
**Optional**
Serve with grated Parmesan and chopped parsley and some toast.
