Ingredients

    Turkey, 85% Lean Ground Turkey 2 lbs
    Onions, raw, 1 medium Chopped
    Yellow Sweet Corn, Frozen, 1 cup kernels
    Peppers, sweet, red,1 cup Chopped
    Salsa, 11/2 cup
    Tortilla Chips, 2 oz
    egg white, fresh, 3 large

Directions

1. Preheat oven to 350 degrees.
2. Spray loaf pan with cooking spray
3. In a large bowl, combine Ground turkey, onions, red bell pepper, corn, 1 cup salsa, crushed tortilla chips, egg whites, and a little pepper. Mix well until thoroughly combined.
4. Place meatloaf mixture in Loaf Pan
5. Spread remaining cup salsa evenly over the top of loaf. Add more, if desired.
6. Bake 1 hour and let stand for 5 minutes before slicing. Cut into 10 slices.
