Ingredients

    1 tsp olive oil
    1 clove garlic
    2 c thinly sliced zucchini
    1 medium onion thinly sliced
    1 15 oz can diced tomatoes
    1 T capers
    pecorino romano cheese (optional)

Tips

i like to use a mandolin to cut the zucchini and onions.


Directions

heat oil in large skillet, add garlic, cook for one minute, add zucchini and onion, cook until wilted. add tomatos with liquid and capers, cook until reduced. Sprinkle with pecorino romano cheese. Serve on top of any kind of cooked fish.
