Number of Servings: 4

Ingredients

    4 - 4 oz B/S chicken breasts
    4 wedges Laughing Cow Cheese (any flavor)
    4 servings extra lean ham
    1/2 package Shake 'N Bake

Directions

1. Pound each to about 1/4 inch thickness.
2. Spread one wedge of cheese on top of each breast (last night I used the garlic & herb). Then put on 2 to 3 slices ham. Roll up the chicken and secure with toothpicks.
3. Place on a baking tray and sprinkle with Shake 'N Bake. Bake at 400 for about 35 to 40 minutes.

    We lowered the sodium by making our own "shake 'n bake" with panko bread crumbs and herbs and spices. Excellent and very easy. - 3/14/09

    Amazing!! I have it bad for this food & I've had to give it up b/c it's so bad - this is SUCH an awesome idea! I couldn't find my tenderizer - so I just "butterflied" the breasts - smeared the cheese & layed the ham. Folded the chicken & sprinkled the breadcrumbs. Quick, Easy & Delish! THANK YOU!! - 2/25/09

    This was REALLY good, and easy. My hubby wants me to add it to my favorites, he loved it so much. I used a piece of turkey bacon instead of the ham though and it was a nice alternative. - 1/12/09

    This was delicious!!! I cut a few more calories by skipping the shake n bake and just sprinkling a little Italian seasoning on top. I used the laughing cow french onion cheese. - 2/25/13

    We love this recipe the chicken turned so nice and crispy on the outside and so tender on the inside I didn't have any shake n bake so I used crushed saltless soda crackers and added some garlic and paprika for seasoning this was to die for thank you for sharing - 3/5/11

    This was a great recipie ... It wowed my friends. I substituted Original Shake n Bake with Hot & Spicy Shake n Bake ... it lowered the sodium a bit and gave it a great flavor. - 3/26/10

  • I used real cheese (gruyere) rather than processed, panko rather than Shake'n'Bake, and prosciutto ham. The calorie count doesn't change much and it tastes like the real thing. Sometimes the "light" version isn't worth it. - 3/22/17

  • This was tasty, but I ended up cooking at the higher end of 40 minutes and the chicken was dry. Next time I'll check at 30 minutes.   • This is so darn good. And really simple to make. I did omit the shake N Bake and opted for panko. I also didn't have toothpicks so I just put the open side down in the pan which worked fine. I also saute it when reheating leftovers which gives a golden color on the panko. - 11/21/12

  • This turned out really great. I used the laughing cow garlic and herb. I did put a little butter on my pan and put it in the oven to melt them dredged my chicken in it, after I rolled them up, then sprinkled some shake n bake on them. My son who is 16 absolutely loved it, as did my husband and I. - 7/12/12

  • This was absolutely delicious. I made a few minor tweaks: used turkey ham, and made my own breadcrumb mixture, but this is definitely a keeper. I used the garlic and herb Laughing Cow.
