    Oil for sautéing
    ¾ cup diced red onion
    1 8 oz. bar of light cream cheese
    1 4 oz. can green chilies
    2 cups cooked, diced chicken or turkey (or more to taste)
    1 can fat free chicken broth
    1 10 oz. can reduced fat cream of chicken soup
    1 large or 2 small cans green enchilada sauce
    1 cup (4 oz.) crumbled feta cheese
    2 cups shredded reduced fat cheddar cheese
    Corn tortillas


Sauté ½ cup red onions in oil in large saucepan. Add cream cheese to onions in saucepan until melted. Add ½ the chicken broth, green chilies and chicken. Set aside. In medium saucepan combine remainder of chicken broth, cream of chicken soup, enchilada sauce and feta cheese. Cook until feta is melted. Place a scoop of chicken mixture in corn tortilla and roll. Continue until all chicken mixture is gone. Set enchiladas side by side in 13 x 9 pan. Pour enchilada sauce mixture over enchiladas. Sprinkle with cheddar cheese. Bake at 350 for 35-40 minutes or until cheese is melted.
