This is a yummy side dish, low fat, low calorie, and soooooo easy! This is a yummy side dish, low fat, low calorie, and soooooo easy!
Number of Servings: 6


    1 lb fresh asperagus spears
    1/2 cup SHREDDED Parmesan cheese
    One lg ripe tomato (fresh from garden is best)
    salt and pepper to taste


steam asperagus for 10 min. Lay in oblong cassarole dish that has been lightly sprayed with Pam. I like to lay it with half the tops pointing one way and half the other. Slice tomato thin and layer on top. Sprinkle cheese over tomato. Add salt, pepper (or other spices) to taste. Bake in pre-heated 350 degree oven for 20-25 min.
