16 oz lean ground beef
1 C fresh mushrooms
1 large yellow/orange/red pepper
10 saltine crackers - no salt added
1/4 C Thai chili sauce + 2-3 Tbsp
1/8 C yellow mustard
3 tsp Worchester sauce
3 Tbsp egg substitute
2 Tbsp dried basil
2 Tbsp dried onions
salt and pepper to taste
Serve with crisp green salad and a couple of small yukon gold potatoes for a hearty, healthy meal. I also love this with roasted beets and rutabegas as a side. Baked sweet potato fries would be great too, possibilities are endless.
Makes a great sandwich as leftovers too!
Experiment with the seasonings as well, I often use tomato paste and sage, rosemary and thyme for a change of pace.
Chop mushrooms and peppers in a food processor until blended then mix with ground beef
Crush saltines and add to beef mixture
Add all other ingredients and mix
Refrigerate for at least an hour
Form into a loaf (can be refrigerated or frozen at this point)
Place the loaf on a broiler pan or on a shallow rack on a baking sheet so juices and grease drain away.
Bake for 1 hour - pour remaining chili sauce over the top
Continue baking for another 15 minutes or until done.
Remove from oven, cover with foil and let rest for 10 - 15 minutes
