    2 eggs, lightly beaten
    1/4 cup tomato juice
    3/4 cup soft bread crumbs
    1 tsp Italian seasoning
    1/2 tsp salt
    1lb ground beef
    1lb ground turkey
    5 oz frozen chopped spinach, thawed and drained
    1/2 cup feta cheese
    1/4 cup oil-packed dried tomatoes, patted dry and chopped
    chopped fresh tomato (optional)


1: Preheat oven to 350 degress. In a large bowl stir together eggs, tomato juice, bread crumbs, Italian seasoning and salt. Add ground beef and turkey; mix well. On a piece of parchment paper or foil pat meat mixture into an 8x12-inch rectangle. Leaving a 1/2-inch border, sprinkle meat with spinach, the 2 ounces feta, and the dried tomatoes. Starting from a short side, carefully roll up meat, using paper or foil to lift; seal edges and ends. Place meat roll, seam side down, in a 9x13-inch baking pan, reshaping roll as necessary.

2: Bake, uncovered, about 1.25 hours or until an instant-read thermometer inserted into center registers 165 degrees. Cover with foil. Let stand for 10 minutes.

3: To serve, slice meat roll. If desired, sprinkle slices with chopped fresh tomato and additional crumbled feta cheese.
