Very simple recipe. Eat as a soup or as a topping for baked potatoes or rice. Very simple recipe. Eat as a soup or as a topping for baked potatoes or rice.
Number of Servings: 8


    8 cups Fresh Broccoli florets
    4 cups Chicken Stock
    one cup Cream
    4 oz Cheddar Cheese - grated
    Salt, pepper, cumin and turmeric to taste


Place florets and stock into a large pot and bring to a boil. Reduce heat and simmer until broccoli is tender, about 20 minutes. Process by batches in a blender until of a smooth consistency. Return to pot, add cream and reheat to boiling. Add spices and stir. Remove from heat and stir in cheese until melted. Thicken with Xanthan Gum or Corn Starch.
