1 cup all purpose flour
1 cup semolina flour
1 tsp salt
1 tsp olive oil
+ extra flour for surface/hands
To make ravioli, use a cookie cutter to cut desired shape. Make sure outside is floured so it doesn't stick to the table & the inside is left a little sticky so the layers stick. Put a tablespoon of filling in each round and press layers together, making sure no air is left inside.
Once mixed (in processor or by hand) and no longer sticky to the touch, roll into a ball and lightly coat with olive oil. Cover and let rest for 30 minutes. Cut dough in half and press with a pasta machine or roller. Cut into desired noodle width and length. Repeat with other half. Boil in water for 5 minutes.
