    1 box Mrs. T's Whole Grain Potato and 5 cheese Pierogis
    1 red bell pepper
    1 small onion
    1 cup roughly chopped mushrooms
    2 cups fresh spinach, chopped
    4 cloves garlic, chopped (I love garlic)
    1 can Hunt's Diced Tomatoes (I used the new Spicy Red Pepper)
    1 TBS olive oil
    1 TBS grated parmesean cheese


(I have also substituted KALE in place of the spinach)


Preheat oven to 350 degrees.

Boil the pierogi's according to th package directions. Drain and set aside.

Heat olive oil and saute the onion and red pepper. Add the mushrooms and garlic and saute until fragrant. Throw in the spinach and tomatoes. Toss until mixed all together.
Put a couple of ladle fulls of the veggie mixture in the bottom of a square pan. PLace pierogi's on top. Top with remaining veggie mixture. Sprinkle with parmesean cheese. Bake for 20 minutes.

Serving Size: Makes 4 servings (3 pierogi's each)
