Ingredients

    2 large eggs
    1/8 cup canola oil
    3/8 cup unsweetened applesauce
    1/2 cup brown sugar
    1/2 tsp vanilla extract
    2 cups unbleached white flour
    1 tsp baking powder
    1/2 tsp salt
    3-4 bananas mashed

Directions

Makes 12 muffins

Preheat oven to 350
Spray muffin tins with oil (lightly) or use liners.

Combine wet ingredients and add mashed bananas. Mix well.

Sift together dry ingredients and add to wet until just combined.

Spoon into muffin tins and bake until a knife inserted into center of muffin comes out clean (about 25 minutes).

These freeze well and can be made into mini muffins (reduce cooking time by about 10 minutes)
