Perfect for the Wheat Belly Diet Perfect for the Wheat Belly Diet

    2 large eggs
    1 T vanilla extract
    1/4 cup ground almonds
    1/4 cup gluten free flour
    1/4 cup flax seed meal
    1/4 cup xylitol
    1 tsp baking powder


Xylitol is a natural sugar free sweetener sold in granulated form. I live in Canada and can find it at any bulk store. I've also left it out and the taste was wonderful as well.


Grease a griddle or skilled over medium high heat.
Mix all batter ingredients together with spoon until well blended.
Pour onto griddle, cooking for 3-4 minutes per side, then flip and cook for an additional few minutes.

Serving Size: Each serving is 2 pancakes

  • I wondered what you used as your gluten-free flour. Seems if it was from a grain, this recipe wouldn't be a Wheat-Belly recipe. But if it was, say, coconut flour, it would definitely work. What did you use? - 12/28/14
