Use ham bone with extra ham to make this soup. Use ham bone with extra ham to make this soup.
Number of Servings: 12


    1 large ham bone, with residual ham
    2 c. chopped ham
    1 large onion, chopped
    2 stalks celery, sliced
    1 c. carrots, sliced
    1/2 small head cabbage, chopped
    1 can canneli beans
    1 can large butter beans


Serve hot, with vinegar to taste. Vinegar gives any bean soup more flavor and helps stabilize blood sugar.


Put 8 c. water in a soup pot with ham bone, onions, celery, and carrots. Cook until residual meat falls off the bone. Cool; scrape fat off the top. Reheat with extra ham, the canned beans and cabbage, until cabbage is soft. I don't add any salt, but I do use all the liquid in the canned beans.

Serving Size: 8-12 servings, 1.5 cup each
