Ingredients

    1 Scoop vanilla protein powder
    1 2/3 c. quick oats pulsed in blender to make flour
    3 Tbl brown sugar
    2 Tbl PB2
    1/4 tsp salt
    1/2 tsp baking soda
    1 tsp baking powder
    1/4 c flour
    1 egg
    1/4 c milk
    1 tsp vanilla
    1 c. cinnamon applesauce

Tips

After cooled, a fun addition is to place all muffins in a large ziplock bag with 1/4 c powdered sugar and 1 tbl cinnamon and shake to coat. :)


Directions

Preheat oven to 350. Spray muffin tins with Pam.

Mix protein powder, flour, sugar, salt PB2, baking soda and baking powder in a large bowl. In a seperate bowl, mix egg, milk, vanilla and applesauce. Add wet ingredients to dry ingredients and mix well. Spoon into prepared muffin tins and bake for 13 minutes. Let cool on cooling rack.
