Introduction

Ingredients

    1 Tablespoon coconut oil
    one medium onion, roughly chopped
    5 cloves of garlic, peeled
    2 Tablespoons of Massaman curry paste (I use Mae Ploy)
    1 Tablespoon of Red Boat Fish Sauce
    8 cups of homemade chicken stock
    10 medium/large carrots, cut into large pieces
    or one pound of baby carrots
    14.5 ounce can of full fat coconut milk

Tips

Recipe incorrectly states that it makes 12 servings. It only makes 10.


Directions

Sautee onion and garlic in coconut oil until fragrant. Add curry paste and cook 30 more seconds. Add fish sauce, stock, and carrots. Cook over medium heat until carrots are soft. Blend with immersion blender (or use regular blender in small batches) until smooth. Stir in coconut milk.

Serve garnished with coconut flakes or a dollop of almond butter. (Garnishes are not calculated in nutritional values.)

Serving Size: Makes 12 one cup servings
