    12 oz lean turkey
    3c sauce, 1 jar
    1 c chopped onion
    2 tbsp garlic
    3 c fresh spinach
    1 c muchrooms, chopped
    1 c ricotta, skim
    2 c mozzerella, 2%
    1/4 c. egg beaters
    6 no boil lasagna noodles


Preheat oven to 375 degrees.
In skillet, spray PAM and cook ground turkey, add onions and garlic until done. Transfer to another dish and add sauce. In skillet cook mushrooms and spinach until wilted. In a bowl mix ricotta, egg beaters and oregano. Add spinach mixture to ricotta. In an 8X8 dish spray with PAM and add a coating of sauce mixture. Layer with 2 no boil noodles, ricotta, sauce mix and mozzerella. Repeat. On top layer cover noodles with remaining sauce and mozzerella. Cover wih foil and bake for 30 minutes. Remove foil and cook an additional 15 minutes. Allow to cool for 5 minutes.
Makes 6 servings.
