    1 med. onion, chopped
    3 stalks celery, chopped
    1 lg. green bell pepper,chopped
    24 oz. cleaned crawfish meat
    1 stick butter
    1 can cream of shrimp
    2 cups cooked rice
    1 tsp. liquid crab and shrimp boil
    salt and pepper to taste


Saute vegetables in butter. Salt and pepper crawfish to taste. Add crawfish to vegetables and cook for 15 mins. Add crab boil and stir well. Add soup, cover and simmer for 5 mins. Layer in a casserolr dish; 1 layer of cooked rice 1 layer of crawfish mixture and 1 layer of cheese. Repeat layers. Bake at 350 degrees for 30 mins.
